Honoring Heritage: A Journey Through Generations of Tortilla Making

In the heart of St. Paul, Minnesota, a family's legacy thrives through the art of tortilla making. Roberto and Angelica, the founders of this cherished business, have seamlessly blended tradition with innovation to create a culinary experience that resonates deeply with their Mexican heritage. From humble beginnings to bustling farmer’s markets, their journey is a testament to the power of passion, family ties, and the enduring allure of authentic flavors.

Roots of Tradition

The origins of this tortilla business can be traced back to the familial roots deeply embedded in the rich soil of Texas and Mexico. Roberto's great-grandmother, hailing from the Tex Mex origin of Mecalin, Texas, instilled in him a love for the craft from a young age. Memories of watching his grandmother cook and indulging in freshly made tortillas served as the cornerstone of his culinary journey. Similarly, Angelica, with ancestral ties to Durango, Mexico, grew up immersed in the tradition of making corn tortillas from scratch, straight from the fields of her father's farm.

Inspiration Behind the Tortilleria

Dissatisfied with the mass-produced offerings available in stores, Roberto and Angelica sought to reconnect with the authenticity and flavors of their childhood. For them, tortilla making wasn't just a business—it was a way to honor their ancestors, share their culture with the community, and create something truly special. Their inspiration stemmed from a deep need for traditional tortillas that reminded them of home and authenticity.

Techniques Passed Down

Central to their mission is the use of heirloom corn sourced either from local farms or from single-origin suppliers in Mexico. This commitment to heirloom varieties isn't just about preserving tradition; it's about honoring the land, nurturing local economies, and delivering unparalleled flavor and nutrition. Each color of heirloom corn brings its unique properties, from vibrant blues packed with antioxidants to earthy yellows bursting with flavor. Roberto and Angelica swear by two ultimate techniques: time and love. Every tortilla is crafted with care, ensuring that each bite transports the eater back to the kitchens of their grandmothers.

Challenges & Growth

Despite the challenges of maintaining traditional practices in a modern business environment, Roberto and Angelica remain steadfast in their commitment to authenticity. They've embraced modern technology where necessary but have never lost sight of their roots. Balancing tradition with innovation, they've managed to scale their business while staying true to their heritage.

Memorable Milestones

Memorable experiences pepper their journey, from the overwhelming support of their community to the joy of sharing their culture through food. The St. Paul Farmer's Market has been instrumental in their success, providing a platform to connect with local farms, collaborate with vendors, and spread the love for handmade tortillas. Whole family gatherings from Texas to Minnesota, with thousands rooting for their success, stand as significant milestones in their journey.

Looking Ahead

As they look to the future, Roberto and Angelica see endless possibilities. Their business is not just about selling tortillas; it's about preserving a legacy, passing down traditions to future generations, and celebrating the vibrant tapestry of Mexican cuisine. With each tortilla they make, they're weaving a story—a story of family, culture, and the timeless allure of homemade goodness. And for them, this journey is only just beginning.
